I work rotating shifts alternating days and nights. This leads to adverse effects on my body including, memory trouble, fatigue, weight gain, and feelings of depression. I want to quit, but I’m nervous about doing it without knowing I could receive unemployment benefits during my job search.

Florida will allow benefits if the work causes a worker’s illness, but you have to have medical documentation which comes to this conclusion as well and you would be wise to give the employer the opportunity to first make an accommodation .. such as putting you on one shift.
It’s just the way it is .. self diagnosis does not constitute good cause.
